Black Beauty: 80 days — 'Black Beauty' is the classic, garden standard for eggplants is commonly seen at farmer's markets and on produce stands.  The broad, lustrous, dark purplish-black egg-shaped fruit range between four to six inches in diameter and are borne well off the ground on medium-sized plants.

Ping Tung Long: 70 days to maturity. These productive plants yield up to 20 fruits each and thrive even in hot weather. The slim fruits average 1-2 inches wide and grow 12-14 inches long. To achieve straight fruits, staking is recommended. This heirloom variety from Taiwan is known for its sweet, tender, and delicious fruits. A favorite way to enjoy them is cooked, then chilled, with a dash of soy sauce, freshly chopped garlic, and small pepper slices.
